TASTING PROFILE

Blackberry Cassis Graphite Leather Tobacco

Save it for braised short ribs on a slow night. The savory, mineral side pulls equal weight with the fruit — leather, graphite, and baking spice in step with cassis.

THE STORY

About this wine

A medium- to full-bodied Cabernet blend from Oak Knoll District vineyards in Napa Valley — 75% Cabernet Sauvignon, with Merlot and Cabernet Franc alongside. Blackberry and cassis ride graphite, leather, and tobacco over silky ripe tannins, and the finish runs long.

The 2023 Cabernet Sauvignon No. 2 is Ashes & Diamonds’ Napa Valley Cabernet blend from select vineyards in the Oak Knoll District at the mouth of Napa Valley. Morning fog and afternoon sea breezes promote slow ripening, while alluvial soils contain volcanic and marine sediments, clay, and sandy loam. The wine was macerated for 18 days in stainless-steel tanks, then barrel-aged 16 months. The producer reports 1,278 cases and lists Diana Snowden Seysses as winemaker.

Worth knowing

28% new French oak, 8% new Austrian oak, and 64% neutral French oak — the barrel program is spelled out to the percent, across 16 months. Where the fruit grows, morning fog and afternoon maritime breezes help it hold balance in the Napa Valley heat.

Blend

  • Cabernet Sauvignon 75%
  • Merlot 20%
  • Cabernet Franc 5%

CHARACTERISTICS AND TASTING TIPS OF THE Ashes & Diamonds Cabernet Sauvignon No. 2 2023

Tasting

Color: Red in the glass.
Nose: Blackberry and currant come first, dark and blue fruit right behind, then graphite and fragrant earth. Leather, tobacco, and baking spice join in, and a subtle scorched-earth note sits underneath the whole thing.
Palate: Medium- to full-bodied, concentrated but silky. Cassis-tinged fruit carries graham cracker and mint accents on superfine ripe tannins, with freshness in balance and a finish that lingers.

Pairs Beautifully With

A must try with grilled ribeye or dry-aged steak
A must try with herb-crusted roast lamb
A must try with aged hard cheeses such as gouda or cheddar
