Pour it cold with grilled octopus, lemon squeezed over. Assyrtiko grown high in Macedonia, not Santorini, cold nights keeping the acid taut — saline, textured, fresh.

THE STORY

About this wine

A dry white, all Assyrtiko, off high plots around Fytia in Macedonia, 450 to 650 metres up, fermented cool in stainless steel and given two months on lees. Fresh citrus and stone fruit on the nose, a medium-bodied, energetic palate — crisp acidity, oily texture, and a long, saline, refreshing finish.

Atma Assyrtiko 2024 is produced by Thymiopoulos Vineyards in Trilofos, Imathia, Greece. It is made from high-altitude vineyards in Macedonia, where cooler conditions and large day–night temperature differences help preserve freshness and elegance. The 2024 harvest took place in September 2024; fermentation was in stainless steel at low temperature, followed by two months on the lees.

Worth knowing

Altitude does the work here. The scattered plots around Fytia sit at roughly 450 to 650 metres, where warm days hand off to cold nights and ripening goes slowly, and after a cool fermentation the wine spends two months on its lees in stainless steel — texture on the palate without losing the freshness the high ground keeps.

CHARACTERISTICS AND TASTING TIPS OF THE Atma Assyrtiko 2024

Tasting

Color: Gold in the glass, a shade deeper than medium.
Nose: Fresh citrus and stone fruit arrive first, delicate flowers just behind. Then ginger and honey come up, saline and savory with them, all of it over grilled lemon and lime.
Palate: Medium-bodied and quick on its feet. Crisp, medium-plus acidity cuts through a rich, oily texture, saline and mineral freshness holding underneath, and the finish runs long, racy, and refreshing.
