THE STORY

About this tin

Bonito del Norte is white tuna, the albacore of the Cantabrian Sea. It's caught one at a time on a rod, then packed in olive oil with salt and nothing else. Olasagasti makes it in Markina, in the Basque Country, by the traditional method. One tin is one serving.

Worth knowing

Olasagasti was Simona's family name. She was Basque and married Salvatore Orlando, who came over from Sicily in the late 1800s. He was one of the Italian pioneers who brought salting to the Cantabrian coast. The company they started still makes its tinned fish in Markina.
