TASTING PROFILE

Cassis Cocoa Dark Cherry Plum Toasted Oak

An undeniable heavy-hitter, 14.9% and powerful tannins, so give it four to five years in bottle. Decant it for a bone-in ribeye — rich, mouth-coating, worth the wait.

THE STORY

About this wine

Deep, full-bodied Red Mountain Cabernet Sauvignon — super-ripe black cherry and damson plum over cocoa powder, black tea, and toasted hazelnut. Rich, opulent, and mouth-coating on the palate, with powerful tannins and a very long finish.

The 2021 Curiositas is The Walls’ Red Mountain Cabernet Sauvignon, made from fruit grown on the AVA’s steep, rocky slopes. It was released in spring 2024, with production reported at 427 cases. The wine was aged for 20 months in predominantly new French-oak barriques and racked once during élevage after 17 months.

Worth knowing

Curiositas is named for curiosity, which Thomas Hobbes called the lust of the mind. It's the deliberate counterpoint to Bellamy, The Walls' more floral Walla Walla Valley Cabernet.

Blend

  • Cabernet Sauvignon 95%
  • Petit Verdot 5%

CHARACTERISTICS AND TASTING TIPS OF THE The Walls 'Curiositas' Cabernet Sauvignon 2021

Tasting

Color: Red in the glass.
Nose: Heady — super-ripe black cherry and damson plum up front, then cocoa powder, black tea, and toasted hazelnut. Mocha, tar, allspice, and crème de violette sit underneath, adding complexity.
Palate: Rich, round, opulent, and intensely mouth-coating. Concentrated currant and cassis at the core, with minerality and a gunpowder-like character emerging with air.
