THE STORY

About this wine

Pernand-side Savigny-lès-Beaune premier cru — Pinot Noir that is soft and supple yet structured. The 2023 runs strawberry, raspberry and cherry over fine earth and spice, on fine-grained tannins, into a long saturated finish.

Domaine Tollot-Beaut is a five-generation family estate based in Chorey-lès-Beaune. The domaine began bottling under its own name in 1921 and is currently run by cousins Nathalie, Jean-Paul, and Olivier Tollot. Its 2023 Savigny-lès-Beaune Les Lavières is sourced from the Pernand side of the Savigny valley, a position associated with delicacy and perfume.

Worth knowing

The name is roofing stone. Les Lavières comes from the laves, the thin flat stones traditionally used for Burgundian roofs, and the site was historically worked for that stone. The 2023 totals 13,327 bottles.

Tasting

Color: Deep purple in the glass, shading through to intense crimson.
Nose: Open and perfumed — strawberry and raspberry lead, a slight peachy note lifting them, then fine earth, spice, and a subtle touch of vanilla from French oak. The fruit stays fresh rather than sun-baked.
Palate: Soft and supple through the middle, structure underneath. Cherry, raspberry and blackberry carry the mid-palate over minerality, fine-grained tannins and integrated acidity framing it all, a touch of savory, meaty depth at the core.
