TASTING PROFILE

Citrus Hazelnut Mineral Spice White Peach

This one wants the cellar more than the dinner table tonight. Give it the years, then bring it out for chicken with morels — dense, saline, long.

THE STORY

About this wine

Richly layered 2025 Pouilly-Fuissé from very old vines at the foot of the Roche de Vergisson — 100% Chardonnay, still and dry, medium- to full-bodied, with vibrant acidity and a long, mineral, saline finish.

Maison Verget was founded in 1990 by Jean-Marie Guffens and Maine Heynen. Based in Sologny in the northern Mâconnais, it operates as a high-end négociant, buying grapes from growers and overseeing their harvest and winemaking.

Worth knowing

Some of these vines have been rooted here since 1917, and the parcel faces two ways — its southern and north-facing slopes ripen at different rates, so harvest can run at intervals of up to ten days, with only the ripest fruit taken over multiple passes.

CHARACTERISTICS AND TASTING TIPS OF THE Verget Pouilly-Fuissé 'Aux Combes' Vieilles Vignes 2025

Tasting

Color: Pale yellow shading toward light gold, with bright, luminous highlights.
Nose: Ripe pear and peach up front, then candied citrus, hazelnut, and fresh butter, with gunflint underneath and a touch of spice behind it all.
Palate: Medium- to full-bodied, with an incisive edge running through all that ample, creamy density. White peach and candied lemon carry vibrant acidity into a taut, long finish with pronounced salinity.

Pairs Beautifully With

A must try with roast poultry in a cream or butter sauce
A must try with seared scallops or other sweet shellfish
A must try with aged, nutty hard cow's milk cheeses
